We prepare, and pin bone the side of trout, then cure the trout with our unique brine ready for hot smoking using an aromatic mix of apple, oak and a little hickory. The result is a gift to the senses: succulent whole side with a golden brown glow encouraging taste with its deep and layered smoky aroma.
